My husband loves oxtail – he ate it at a Caribbean restaurant back home in Kentucky – we’ve since moved to Arizona and the last time he visited Kentucky the place had closed down. Soooo I figured I’d try to make it for him. It’s almost done – can’t wait to see what he thinks. I’ve never had it – scared to try it myself so I’ll let him be the judge.

        Hi Rosie,

This looks so delicious!! I plan on making this for my oxtail loving friends. But I probably have to at least cook 6 or 7 pounds of oxtail. Should I just triple or quadruple the recipe? I really don’t want to screw this up for my friends. I am so looking forward to cooking this too….. I love lima beans too. Do you use both baby lima and regular lima? Btw, I am rating this recipe now, because I know I am going to love it!!!

        Thank you in advance!

Yes, you will have to add more of all the ingredients. Any limas will do. Enjoy!

Hi Shay! Yes, they can be cooked in the slow cooker. It would probably be 6 hours or so on low. Frozen limas will work fine.

I have about another hour before I add the beans and tomatoes. I can’t wait to serve this to my husband and sons. Thanks for the delicious and simple recipe.

Made these yesterday, My husband was born in Jamaica, and I love surprising him with new Jamaican dishes that I’ve learned to make. He said my oxtails were better than some restaurants he’s had here in the US. I would love to learn to prepare his favorite… ackee and salt fish. Do you have a recipe for that?

I JUST got turned on to your site via Facebook. I have not tried your recipes yet, but watching you make them I can tell they are the real deal.

I am definitely making this one…a few questions…can we marinate overnight? Also, can I use lentils instead of lima beans (or maybe even pinto beans?).

I would love to see you take on some Latin American dishes as well! (besides enchiladas, fajitas and tacos, lol).

I’m making this with 6lbs. of oxtails, do I triple absolutely everything? I measured out all of the spices x 3, and it looks like a whole lot. I used about half of it to coat the oxtails, and it looks like more than enough. Should I use the rest of the spices anyway? I really want them to turn out great.

I’ve made these SO many times since I first discovered your recipe. I wanted to cut down on the cooking time this weekend, so I did them in the InstantPot on high pressure for 45 minutes. I did NOT sear them–and was so worried I’d gone wrong with that. Natural pressure release for 10 mins, then manual release. They turned out just as if I’d made them on the stovetop–SO delicious!! I can’t thank you enough for sharing this recipe!!
