In reply to Aldaiz Richard. To maintain the temperature, avoid overcrowding the pan. Also use a nice quality heavy skillet. My favorite is cast iron.

You mentioned maintaining the temperature, this has been another one of my hardest task in learning to cook or i should say fry. If there is a secret to this, I would love to learn it.
