Sift the flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg together in a large bowl.
2 1/4 cups all purpose flour, 1 3/4 tsp baking powder, 1 1/4 tsp baking soda, 1/2 tsp salt, 1 tsp ground cinnamon, 1/4 tsp ground nutmeg
Add in the buttermilk, egg, brown sugar, vanilla extract, and almond extract.

Mix everything until well combined.
Add in the crushed pineapple, and gently fold in. Be sure to not over mix the batter!

Preheat your griddle or pan on medium heat. Melt butter on the griddle, then pour the pancake batter. Each pancake should be about 1/3rd to 1/2 cup of batter.
2-3 tbsp butter
Cook the pancakes until they are golden brown.
Plate, then add whipped cream and cherries on top.
Optional Toppings: whipped cream, cherries
