Reserve approximately ½ cup fat from the turkey drippings.

Add the fat to a pan over medium-high heat and, if solidified, allow the fat to melt. (If you don't have any turkey fat, sub with 4 tablespoons of butter).
Start sprinkling in some flour, about 1 tablespoon at a time, whisking as you do so.

Once flour is whisked in, slowly whisk in the remaining turkey drippings (approximately 4-5 cups), about one cup at a time.

Continuously whisk ingredients together to avoid lumps.
Turn the heat down to low and simmer the gravy for 15-20 minutes, whisking occasionally to avoid sticking/burning.
Test gravy with a spoon to ensure it is your desired thickness.
